Easter Cupcakes

If you love cupcakes then you must try this recipe that makes the most light and delicious cupcakes that are perfect for Easter!

These Easter cupcakes are the cutest, aren’t they? You can use any cupcake/cake recipe you’d like (I’m sharing my favorite recipe below) and making the nests for the tops are super easy!

The kids love when I make these bites for Easter. You can just plop a few mini chocolate eggs in the nest and call it a day.

Let me show you how easy these are to make!

For the nests, I used a bag of chocolate chips and the same size bag of shredded coconut. It made about a dozen cupcakes.

Ingredients for the nest:

  • shredded coconut, unsweetened
  • semi-sweet chocolate chips
  • mini chocolate eggs for the top

Directions:

  1. Melt the chocolate chips for 30 seconds or so in the microwave and add a handful of coconut.
  2. Wait for the chocolate to cool a bit and then, using your hands, mold the chocolate/coconut combo into little nests.
  3. Put the nest on wax or parchment paper lined cookie sheet or a plate until they harden.
  4. Plop the nest on top of your cupcake and add the mini eggs.

It’s just that easy. Aren’t they adorable?

Here is the famous Magnolia’s bakery vanilla cupcake recipe below.

This recipes calls for 2 dozen cupcakes. You will need to double the ingredients for the nests to make 24 nests.

Magnolia’s Vanilla Cupcakes

Servings: 24 cupcakes

Ingredients

Cupcakes:

  • 1 1/2 cups self-rising flour
  • 1 1/4 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 2 cups sugar
  • 4 large eggs, room temperature
  • 1 cup milk
  • 1 tsp pure vanilla extract

Icing:

  • 1 cup unsalted butter, softened
  • 6-8 cups icing/confectioners' sugar
  • 1/2 cup milk
  • 2 tsp pure vanilla extract

Instructions

Cupcakes:

  • Preheat oven to 350 deg F.
  • Line 2 muffin tins with cupcake liners.
  • In a small bowl, combine flours. Set aside.
  • In a large bowl, on medium speed cream the butter until smooth. Add the sugar gradually and beat until fluffy, about 3 minutes. Add eggs one at a time beating well after each addition.
  • Add the dry ingredients in 3 parts, alternating with milk and vanilla. With each addition, beat until the ingredients are incorporated but do not over beat. Scrape down the sides of the bowl with a spatula.
  • Spoon the batter into the cupcake liners 3/4 full.
  • Bake 20-25 minutes or until the centre of the cupcake comes out clean with a toothpick.
  • Cool the cupcakes in the tins for about 15 minutes then remove from the tin and cool completely on a wire rack.

Icing:

  • Place the butter in a large mixing bowl. Add 4 cups of sugar and then the milk and vanilla. On medium speed, beat until smooth and creamy about 3-5 minutes.
  • Gradually add the remaining sugar, 1 cup at time, beating well after each addition (about 2 minutes) until the icing is thick enough to be good spreading consistency.
  • You may not need all of the sugar. If desired, add a few drops of food colouring and mix thoroughly. Icing can be stored at room temperature in an airtight container for up to 3 days.

  5. That looks like a really easy recipe and I copied it over. LOVE the idea of the nests, too. SOOOO cute. I think I would use chow mein noodles because I have a couple here that are allergic to coconut. Really a SWEET post! xo Diana
