Chocolate Crinkle Cookies

These cookies don't need much butter but lots of eggs. Rolled in icing (confectioner's) sugar, they make 'crinkles' in the cookies when baked.

Ingredients

  • 1/4 cup butter
  • 2 cups sugar
  • 3 eggs
  • 2 tsp. vanilla
  • 4 x 1 oz unsweetened chocolate squares, melted
  • 2 1/2 cups flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 cup icing (confectioner's sugar)

Instructions

  • Preheat oven to 350 deg F.
  • Cream butter and sugar together.
  • Beat in eggs, 1 at a time.
  • Mix in vanilla and chocolate.
  • Stir flour, baking powder and salt together. Add and mix well.
  • Shapes into 1 inch balls.
  • Roll balls in icing/powdered sugar. Coat well. Arranged on greased baking sheet.
  • Bake for 8-12 minutes.
  • Cookies will be soft.
